1/2 teaspoon red chili powder
1/2 cup water
1 cup mixed vegetables (potatoes, carrots, peas, cauliflower)
1/2 cup tomato puree
1/4 cup butter
Salt to taste
Chopped onions, cilantro, and lemon wedges for serving

Instructions:

1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened.

2. Add the garlic, ginger, turmeric powder, cumin powder, garam masala, and red chili powder. Cook for 30 seconds.

3. Add the water and mixed vegetables. Bring to a boil, then reduce heat and simmer until vegetables are tender.

4. Add the tomato puree and simmer for 5 minutes more.

5. Mash the vegetables with a potato masher until you have a thick, creamy curry.

6. Stir in the butter and salt to taste.



7. Serve hot with pav bread, chopped onions, cilantro, and lemon wedges.

Tips:

  • For a spicier pav bhaji, add more red chili powder.
  • For a creamier pav bhaji, add some heavy cream or milk.
