Chole Ki Sabji, also known as Punjabi Chole or Chickpea Curry, is a hearty and flavorful North Indian dish made with chickpeas, aromatic spices, and a rich tomato-based gravy.

Ingredients:
- 1 cup chickpeas (chole), soaked overnight
- 2 tbsp oil
- 1 tsp cumin seeds
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 green chili, chopped
- 1 tsp turmeric powder
- 2 tsp coriander powder
- 1 tsp garam masala
- 1 tsp red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Step-by-Step Recipe :
1. Soak and Boil the Chickpeas
Soak the chickpeas overnight, then drain the water.
Boil the chickpeas in a pressure cooker with fresh water for 5-6 whistles, until they’re soft.
2. Prepare the Tempering (Tadka)
In a pan, heat 2 tbsp of oil. Add cumin seeds and let them sizzle for a few seconds.
3. Sauté Onions and Green Chili
Add finely chopped onions and green chili to the pan.
Sauté until the onions turn golden brown.
4. Add Ginger-Garlic Paste
Next, add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
5. Stir in Tomato Puree and Spices
Add the pureed tomatoes to the pan, along with turmeric, coriander powder, red chili powder, and salt. Cook for 5-7 minutes until the oil separates from the masala.
6. Add the Boiled Chickpeas
Gently mix in the boiled chickpeas with the masala.
Let them simmer on low heat for 10-12 minutes to absorb all the flavors.
7. Add Garam Masala and Garnish
Sprinkle garam masala and stir well.
Garnish with freshly chopped coriander leaves and a squeeze of lemon juice for extra flavor.
