A Step-by-Step Guide





Lasooni Palak Paneer 

Lasooni Palak Paneer is a popular North Indian dish that combines the flavors of spinach, paneer, and garlic. The creamy spinach sauce is infused with the pungent aroma and taste of garlic, making it a delightful and satisfying vegetarian meal.


Ingredients:

  • 1 bunch fresh spinach, washed and chopped
  • 1 block paneer, cubed
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1/4 cup heavy cream
  • 1/4 cup water
  • Salt to taste
  • Ghee or butter for cooking

Instructions:

1. Prepare the spinach:  In a large pot, bring a few inches of water to a boil. 
                                         Add the chopped spinach and cook for 1-2 minutes, or until wilted. 
                                         Drain the spinach and set aside.



2. Saute the garlic and onion:  Heat ghee or butter in a large pan over medium heat. 
                                                    Add the minced garlic and chopped onion, and cook until softened and                                                      fragrant.




3. Add the spices: Add the cumin powder, coriander powder, red chili powder, and garam masala to the pan. Cook for 30 seconds, or until fragrant.

4. Add the spinach:  Add the cooked spinach to the pan and stir to combine. 
                                  Cook for 2-3 minutes, or until the spinach is heated through.





5. Puree the spinach:  Transfer the spinach mixture to a blender and puree until smooth.






6. Add the paneer:  Return the pureed spinach to the pan and add the cubed paneer. 
                                  Cook for 2-3 minutes, or until the paneer is heated through.


7. Add the cream and water:   Add the heavy cream and water to the pan and stir to combine. 
                                                   Bring to a simmer and cook for 2-3 minutes, or until the sauce has                                                              thickened.


8. Season to taste: Season with salt to taste.



Tips:

  • For a spicier dish, add more red chili powder.
  • You can use frozen spinach, but thaw it completely before using it.
  • For a richer flavor, add a few tablespoons of cashew nuts or almonds to the spinach puree.
  • Serve Lasooni Palak Paneer hot with naan or rice.
