This dish is easy to make and can be enjoyed by people of all ages.

Ingredients:

  • 1 kg boneless chicken, cut into pieces
  • 1 cup basmati rice, washed and drained
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon cloves powder
  • 1/4 teaspoon saffron strands
  • 1/4 cup plain yogurt
  • 1/4 cup lemon juice
  • 1/4 cup vegetable oil
  • 1 tablespoon ghee
  • Salt to taste
  • Water as needed

Instructions:

1. Marinate the chicken: In a large bowl, combine the chicken pieces with the yogurt, lemon juice, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, cardamom powder, cloves powder, saffron strands, salt, and a little water.

Mix well to coat the chicken evenly. Cover the bowl and refrigerate for at least 30 minutes, or preferably overnight.

2. Cook the rice: Bring a pot of water to a boil. Add the rice and cook for 10-12 minutes, or until tender but not mushy.
Drain the rice and set aside.

3. Sauté the onions: Heat the vegetable oil in a large pot over medium heat.
Add the onions and cook until golden brown.
Add the garlic and ginger and cook for 1 minute more.

4. Cook the chicken: Add the marinated chicken to the pot and cook until browned on all sides.

5. Add the spices: Add the garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, cardamom powder, and cloves powder to the pot.
Stir well to combine.

6. Add the rice and water: Add the cooked rice, saffron strands, and enough water to cover the rice by about 1 inch.
Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.

7. Add the ghee: Stir in the ghee and let it melt for 1 minute.

8. Serve: Serve the chicken biryani  with raita.

Tips:

  • For a richer flavor, you can use ghee instead of vegetable oil for cooking the onions and chicken.
  • If you don't have saffron, you can omit it or use a pinch of food coloring instead.
  • For a spicier biryani, add more red chili powder.
  • To make the biryani even more flavorful, you can add a few bay leaves, green cardamom pods, and black peppercorns to the pot with the onions and spices.

I hope you enjoy this delicious Chicken Biryani recipe!
