Chicken Biryani | A Flavorful Indian Delight

Ingredients:
- 1 kg boneless chicken, cut into pieces
- 1 cup basmati rice, washed and drained
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 inch piece ginger, grated
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon cloves powder
- 1/4 teaspoon saffron strands
- 1/4 cup plain yogurt
- 1/4 cup lemon juice
- 1/4 cup vegetable oil
- 1 tablespoon ghee
- Salt to taste
- Water as needed
Instructions:
1. Marinate the chicken: In a large bowl, combine the chicken pieces with the yogurt, lemon juice, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, cardamom powder, cloves powder, saffron strands, salt, and a little water.
Mix well to coat the chicken evenly. Cover the bowl and refrigerate for at least 30 minutes, or preferably overnight.
4. Cook the chicken: Add the marinated chicken to the pot and cook until browned on all sides.
5. Add the spices: Add the garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, cardamom powder, and cloves powder to the pot.
6. Add the rice and water: Add the cooked rice, saffron strands, and enough water to cover the rice by about 1 inch.
7. Add the ghee: Stir in the ghee and let it melt for 1 minute.
8. Serve: Serve the chicken biryani with raita.
Tips:
- For a richer flavor, you can use ghee instead of vegetable oil for cooking the onions and chicken.
- If you don't have saffron, you can omit it or use a pinch of food coloring instead.
- For a spicier biryani, add more red chili powder.
- To make the biryani even more flavorful, you can add a few bay leaves, green cardamom pods, and black peppercorns to the pot with the onions and spices.
