Soft and Fluffy Suji Ki Idli


Suji Ki Idli is a healthy, quick, and delicious Indian breakfast made from semolina (suji or rava). These steamed cakes are light, fluffy, and perfect when served with chutney and sambar. 

In this article, we will walk you through the process of making soft Suji Ki Idli, step by step, for every stage of the preparation.



Ingredients:

  • 1 cup suji (semolina)
  • 1 cup yogurt (dahi)
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1/2 tsp baking soda or Eno
  • 1 green chili, finely chopped
  • 1 tsp ginger, grated
  • 1/4 cup grated carrots (optional)
  • Salt to taste
  • 1 tbsp oil
  • Water as required
  • Fresh coriander leaves for garnish



Step-by-Step Recipe :


1. Roast the Suji (Semolina)  

In a pan, dry roast the suji on low heat until it turns light golden and aromatic. 

Be sure not to over-roast. Set aside to cool.


2. Prepare the Batter  

In a mixing bowl, combine the roasted suji with yogurt and water to form a smooth batter. 

The consistency should be thick but pourable. 

Add salt and set aside for 10-15 minutes to allow the semolina to absorb the moisture.


3. Tempering (Tadka)  

In a small pan, heat oil and add mustard seeds. 

When they start to crackle, add urad dal, green chili, and grated ginger. 

Sauté for a minute, then pour the tempering into the idli batter and mix well.


4. Add Vegetables (Optional)  

To make the idlis more nutritious, you can add grated carrots or any vegetables of your choice. 

Stir well into the batter.


5. Add Baking Soda or Eno  

Just before steaming, add 1/2 tsp baking soda or Eno to the batter. 

Stir quickly, as this will help the idlis rise and become fluffy.


6. Grease the Idli Moulds  

Grease the idli plates with a little oil to prevent sticking. 

Pour the batter into each mould, filling them about 3/4 of the way.


7. Steam the Idlis  

Place the idli stand in a steamer and steam the idlis on medium heat for about 12-15 minutes, or until a toothpick inserted comes out clean.


8. Serve Hot  

Once cooked, carefully remove the idlis from the moulds. 

Serve hot with coconut chutney and sambar for a wholesome meal.
