Ingredients:

  • 1 cup yellow lentils

  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon garam masala 
  • 1/4 teaspoon asafoetida (hing)
  • 1/4 cup vegetable oil
  • 1/4 cup chopped fresh cilantro
  • Salt to taste

Instructions:

1. Rinse the lentils: Rinse the lentils under cold water until the water runs clear.




2. Cook the lentils: In a large pot, combine the lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender but not mushy.

3. Make the tadka:   Heat the oil in a small pan over medium heat. 
                                   Add the cumin seeds and asafoetida. 
                                   Once the cumin seeds start to crackle, add the onions, garlic, and ginger. 
                                   Cook until the onions are softened and golden brown.




4. Add the spices:  Add the coriander powder, turmeric powder, red chili powder, and garam masala.                                     Cook for 1 minute, stirring constantly.

5. Add the Tadka to the lentils: Pour the tadka into the pot with the lentils. 
                                                    Stir to combine.





6. Simmer for 5 minutes: Simmer for 5 minutes, or until the flavors have blended.


7. Add the cilantro: Stir in the chopped cilantro.



8. Serve: Serve hot with rice, roti, or naan.
